Belgian Waffles with Fresh Whipped Cream

When I think of a fancy brunch, the first food that comes to mind are Belgian Waffles! Crispy on the outside, fluffy and delicious on the inside... topped with fresh fruit, rich maple syrup, and homemade whipped cream! There’s really nothing better!


Quantity: 8


Ingredients:

2 1/4 cup AP flour

1 tbsp baking powder

3 tbsp granulated sugar

1 tsp ground cinnamon

1/2 tsp salt

2 large eggs, separated

1/2 cup canola or vegetable oil

2 cups milk

1 tsp vanilla extract


For the Whipped Cream:

1 cup heavy whipping cream

3 tbsp powdered sugar, sifted

1 tsp vanilla extract


Spray your waffle griddle with cooking spray, and turn on. Turn on your oven to 275 degrees.


In a large bowl, combine the flour, baking powder, sugar, cinnamon and salt. Whisk the dry ingredients to mix evenly. Separate the eggs - place the yolks in a medium bowl, and the whites in the bowl of your mixer. Beat the egg whites with the whisk attachment, until stiff peaks form (about 3 min). While the mixer is going, add the oil, milk and vanilla extract to the bowl with the egg yolks. Use a whisk to mix those ingredients thouroughly. Add the dry ingredients to the wet ingredients, and mix well. Gently fold the egg whites into the batter. Be careful not to over mix.

Pour 3/4 cup of batter onto the waffle griddle, and cook until done. Your waffle griddle should tell you when it is ready. If it doesn’t, check the waffle every few minutes, and remove once it has achieved a golden brown color.

While you make the rest of the waffles, keep the ones that are done warm in the oven, placed directly in the rack.

While some of the waffles are cooking, add 1 cup of heavy cream to the bowl of your mixer. Beat until just before stiff peaks form. Add the sifted powdered sugar and vanilla extract, and continue to beat until stiff peaks form.

Drizzle your waffles with good quality maple syrup, top with fresh fruit, and pipe or dollop some of your homemade whipped cream on top! Enjoy!!
